New Favorite Salsa



let me first just say that this salsa can in no way replace my dads recipe. for those of you who have had it, you know what i'm taking about. he makes the best homemade salsa ever. problem is, i can't duplicate it. believe me I've tried. it never turns out right, never turns out quite the same. i've had lessons. frustrates me, probably frustrates my dad. i'd all but given up. then i came across this recipe from "the pioneer woman". really like her recipes. so i decided to try it. it's good. yummy. get up in the middle of the night to sneak it, that good. And best of all it calls for canned tomatoes. you can't tell one bit. i hate store bought tomatoes. so unless there garden grown, i'd just soon skip them. try it, i think you'll like it.

Restaurant style Salsa

Ingredients
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cups Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
¼ teaspoons Sugar
¼ teaspoons Salt
¼ teaspoons Ground Cumin
½ cups Cilantro (more To Taste!)
½ whole Lime Juice

Preparation Instructions:

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. (make sure you do this step. it takes a while for the flavors to marinate.)

I"m not a big tomato salsa fan. I do love your dad's, but otherwise I never eat it. I can't take the oniony taste it leaves in my mouth. But I'll keep this in mind, just in case I ever have to make some!
